I'm using PHP and it would work with it. It's really up to you when trying to develop for the web. Just choose the language you are most comfortable it.

No one else can "register" your domain name once you registered it (buying it = registering it under your name for the period purchased until it expires). The reason why you are changing your registrars DNS (godaddy, the place where you bought the domain) to the DNS of your shared hosting...

Let me answer your questions: First question: No one can steal your domain name that easily. In order for someone else to use your domain name they need to gain access to your Namecheap account and point it to their DNS servers. Any server can only point "yourdomain.com" to a shared account...

Learn PHP (thats what I did after those three you mentioned). You'll be able to do some nice web apps in a very short time and as time passes, you'll learn the do's and dont's of PHP.
