Exactly! our penalty was because of unnatural links. So, we took off all the 301, and sent the Reconsideration Request with a Google Spread Sheets indicating which were the fake domains, the date of purchase and the date of taking them down.

Since we took action until G indexed us again it had been just 3 days.
ps: the moral of all of this is that my boss is now asking me things. (thank god, again)

Cheking Ahrefs we have 500+ domain backlinks (organic, without counting the stupid cheat my boss did)

I noticed the penalty when looking the metrics on GSC, from 2.000 clicks on average to 0 just in 1 day.
And I confirmed by doing:
site:catalunyadiari(.)com and nothing appeared but the site was still online.

As I read G says that sometimes they get crawling errors. So yeah, basically it's G screwing you up by its own mistakes. If you read about removing urls they say something like: "... please don't use this tool to erase crawling errors, they will be removed in time"...
