I don't think it is theme dependent. My site has a publish area where I can save as a draft and preview the page as many times as I wish before we choose to publish it.

It is very easy. You just add the page in your dashboard area. It won't show up publicly until you "publish" it. It also won't show up anywhere on your site until you add it to the menu structure.

I would copy everything via FTP to your desktop and then copy the whole file from your desktop to the new server location. Once the copied data is transferred to the new server location, I would then change wordpress themes to the theme you want.
