Hehe, that's hard to say, whoever finds something like this will do it himself not share it; also, you say you're looking for more things to do - the more you do the lower the change any succeed, either you concentrate on one and do it till it works or you're bound to fail all..

With dev + AI skills and $500 I'd skip SaaS-for-everyone and build a small automation service for one type of local business. I run a contracting company and built my own texting and follow-up automation for it, because missed calls and forgotten quotes cost trades real jobs.
$500 covers a domain, a phone number with an SMS provider, and model credits for months. Build it once, sell it to 5 businesses in one trade at $150-200/month, and you have recurring income you can turn into a SaaS later once you know what they actually use. Agree with SmTasker though: pick one and stick with it.

I would skip anything where you built first. With 500 the cheap move is a service you can sell before you build it so find 3 or 5 people in a niche you already know who have a problem you can solve. Tell them what you’re doing and what it costs and only spend on tools after one says yes

honestly seriously you dont need that much money if you can do it all yourself , except for hosting and domain , and maybe some services to scrape , get the required shit you need
also you dont have to discover any new wheel ; just look for information about websites that are making money etc and see if you can do it better but do your research dont believe any youtube crap or even from here remember you are the product lol
the important is being able to get traffic organically finding something that you can replicate infinite times and that is proven that when you launch it it indexes and ranks on the first page . and most important is having a big BUY button so that people can buy lol and understand their doubts and answer them towards that button so then each step you take you know its going to give a result or a calculated result
