Google now shows the generative AI impressions in Google search console. Is that a subset of the search result total impressions? If I divide the generative ai impressions by my total impressions, can I figure out how much ai has penetrated into my space? Or are the search result total impressions & generative ai impressions unique from each other?

They are a subset of your total search impressions. So yeah, dividing your generative AI impressions by your total impressions will give you a pretty accurate percentage of how much AI has penetrated your specific space. Good luck tracking it!
Prior to Google launching AI Performance report in search console people use to view data of average position of the keyword / keyphrase in the "performance report". Average position of 1 to 5 in the report majorly reflected an approximate position in AI Overviews of Google search engine.
