I've been following up new pages after their initial crawling rather than just monitoring if they're indexed. Wondering what others look out for in those early weeks.

Yes definitely.

Indexing is first and crucial win but other things should be observed.
Crawl time, budget, new search queries ranked etc.

Sure. I like to look at how a page starts to perform after the first crawl – specifically its first queries, impressions, ranking movement and if visibility continues to grow over the first few weeks.
 
I mostly keep an eye on Search Console for early impressions and the initial queries Google tests the page for. It gives a good idea if the intent is aligned before rankings settle.

after it crawls i looks at the queries that start appearing in GSC and if google is testing it for any thing else besides the target keyword
 
Yeah, I usually watch how the page starts ranking after the first crawl especially impressions keyword movement and whether Google is picking up the right terms
