Finding a lot of competitors 'suggesting edits' to change my business hours to 'Closed.' Is there a way to lock these, or do we just have to monitor the dashboard 24/7?

That's a very good question, because Google seems to be implementing these changes very quickly. I'd like to know the answer to that, too.

You just have to confirm your business hours from your admin profile and upload a picture or two, so Google doesn't think that you have an inactive business.

If it is an active business profile, then your competitors can't change your business hours.

set up GBP notifications in your dashboard so you get alerts immediately when changes are made. There’s no way to fully disable suggested edits.

I have been wondering same thing. Tried a few tweaks but no success. I will like to know a definite solution to this.
