Have you ever removed a page that was actually bringing traffic

Not a good idea to delete a page that brings traffic. However you can always update it's content and redesigned the page completely. I have done this many time and it's working great for me. The only thing that matter is updated content should be useful to your audience..

I once redesigned a page that was doing well and the traffic dropped afterward. The new version looked better, but it did not match the original search intent as well.

Yes. A dip for a short period of time does not necessarily mean the update was a failure. Normally,I would wait for sometime and then do a comparison between the performance of the new and the previous queries.

That is a good strategy,If the searches are valuable then optimiziing the current page will be a better idea rather than discarding all the relevancy of the page.

Absolutely right. A page that already has traffic on it already has some value, so I would first see what it’s ranking for, how many backlinks it has, and how well it converts before making any changes to it.

I guess it might be required in some cases. Like suppose the content on the page is violating policies of ad network like Google. Then you might need to remove it even though it was bringing traffic.
 
I've seen this play out in practice. Some pages saw traffic drop immediately after removal, while others actually gained rankings after restructuring, it really comes down to the conversion value of the page itself.
 
I’ve seen this go both ways. If the page has valuable traffic I’d avoid deleting it outright and first check the queries, backlinks conversions and intent Sometimes improving the page preserves the traffic while a redirect makes more sense if the content is genuinely outdated or redundant
 
I’ve done it before and traffic dropped for a while after the redesign. if a page is already bringing traffic, I’d avoid deleting it completely and improve it step by step instead.

better keep the same URL and search intent unless there’s a strong reason to change everything.
