Understanding search intent probably takes the longest real world testing teaches far more than guides.
The biggest challenge for me was understanding how correlation is different from causation in terms of SEO. Multiple aspects are changed at one time, the ranking changes, and one assumes that the last change must be the one which made the difference. taking proper notes, making smaller changes, and studying the effects taught me much more compare to any SEO tutorial.
The very toughest thing for me was to determine what is wrong and not rush into changes. Sometimes it is intention, sometimes it is the web page itself that is poorly optimised and sometimes it is just lack of authority on the website in general. It tooks more time than learning SEO techniques itself.

In my opinion, the most difficult skill to master was how to distinguish between SEO tips that sound gud and those that really work on a particular website. A certain strategy may prove to be very efficient for one type of niche and totally in efficient for another one, thus, analysing what happened and why required more time than studying basic SEO principles.

The most challeinging aspect for me has been the ability to distingiuish correlation from causation in SEO.
You alter a title, add links or modify the content, and the rankings change, but it is not always that a certain change caused this.
Many tests were needed before i could stop jumping up each time my rankings changed.
knowing what to test, what to measure, and when not to interfere may have been the most valuable lesson.

For me, it was understanding search intent. At first, I thought SEO was mostly about keywords and backlinks, but I eventually realized that matching what users actually want has a much bigger impact. That lesson came from testing different types of content, not from reading guides alone.

Search intent for sure. once I understood what people actually wanted instead of just chasing keywords my rankings became a lot more consistent.
