Have a youtube channel where I post videos of my gameplay. Getting a decent number of views, but not many people are subscribing. What's the best way to start converting those viewers into subscribers?

I think your channel already has a good sign because you’re getting views the main issue is turning those viewers into returning followers.

best way is give ppl a reason to sub. make ur videos part of a series, upload consistently and ask for sub at the right time, not just at the start. if viewers know more similar content is coming, they are much more likely to hit subscribe.
 
The video views and traffic are high, but how many exactly?
In my opinion, you should add a call to action to subscribe in the video content, or add some blue screen click icons.
But most importantly, your content must be good for people to subscribe to your channel. According to user behavior analysis, people might watch your content immediately but not necessarily subscribe; they might watch your channel several times before subscribing
Therefore, be persistent and make even better videos "content is king"
 
Why reinvent the wheel? Try already what works for other bloggers, I mean contests: subscribe, like and write a comment. Also, do not forget to like and respond to their comments, so it will be an interaction with the user and you will gain his trust.
 
You can stop using generic 'please subscribe' outros and instead close your videos by teasing the exact challenge or storyline of your next episode so viewers feel a psychological need to lock in and follow the journey

I've been through the same thing. For me, the key was giving people a reason to subscribe beyond just watching one video. Short callouts in the video (“if you want more tips like this, hit subscribe”), consistent upload schedule, and creating a few standout videos that really hook viewers tend to convert better. Also, engaging in the comments helps build a small community that’s more likely to stick around.
 
people subscribe because they want to see more of the same. Tell people to subscribe, and make it clear that you update videos on a regular schedule, if they know they will see more of the same quality from you on a regular basis, they will click subscribe
 
People subscribe if they want to see more such content. Subscribe button is a shortcut for searching and watching new videos from your channel. So, you can't do anything if they don't want to watch more such content or there is nothing unique about your channel. If you excite visitors to watch more, they'll definitely subscribe.
