If there's 1000 concurrent viewers for the entire duration of the video, does that mean 30 min x 1000 viewers = 30 000 mins (500 hours) ?

No one said the views or viewers will be 100% concurrent (that depends on many factors), but for 1000 15m live views ordered you will normally get around 140 hours of watchtime, with average view duration of about 3 minutes. That means that during those 15m your stream will be watched not by 1000, but by ~5000 real people. On 30m version by around 10K real people and so on (unlike with the 3rd party bot views, where 1000 bots will watch your stream for all the time ordered).
