Yes. use your own real account. to avoid any trouble with eBay in the future. (Identity verification,etc.)
Also, your chance to get suspended with aged account is less than using a fresh one.

I read eBay allows multiple accounts/stores - is this multiple stores or multiple actual accounts? And what happens if I get suspended?

Yes they allowed multiple accs. however, if one of your accounts gets suspended, the rest of them will be shut down too. this is the reason why it's important to keep them unlinked. if you get suspended, you simply have to chat/call eBay support to reinstate your account

I have only one PayPal accounts, I don't have to create a new one, right? Using VPNs and stuff is not my cup of tea

Yes. you can use your own Paypal. using VPNs, etc it's just for someone who wants to create multiple unlinked Accounts or, got suspended and wants to start fresh.

Yes. 1-2 Hours a day is enough as long as you are dedicated and working every day on your store. (4-5 days a week)
