All the listed ones are good, just check out which ones you like. Always take the ones with most traffic.

Can someone please explain the importance of the trackers when you create the torrent? I just use the 2 standard ones in utorrent:
tracker * openbittorrent * *80 / announce
tracker * publicbt * *80 / announce
(and upload torrent to btjunkie, extratorrent and tpb)
...
Is there an advantage to using more than these 2?

Trackers are what keep your torrents available, sending information to the downloader so he can connect and recieve the "bits" from you.
It's very important to have more than just two trackers because if those two were to fail at the same time your torrent would not be downloadable by anyone ('Ive had it happen when 3 trackers went down)
Some say too many trackers is also not good because you stress your torrent client out trying to update all those trackers, there may be some truth to this but it's probably only true when you have tons of torrent seeding.
Personally, I would not use less than 5 trackers but never more than 15.
(7 or 8 is a nice balance)
The best way to find the most reliable trackers is to visit your favorite torrent site and download some torrent "files" (not the torrent itself just the torrent file). Pick the most popular, heavily seeded torrents you can find
Then visit this site:
http://torrenteditor.com/
load the torrent file up like you are going to edit it and it will show you which trackers are online and which are offline. You will start to see a pattern of which are usually online as opposed to off and those are the ones you will want to use
As you begin seeding your own torrents keep an eye your trackers from time to time from within your torrent client, you will see if any of those trackers are no longer running very good and you can update your tracker list accordingly.
