Here's an update that I promised. I constructed two very small tests, and put together 1 site and 3 small blogs. I uploaded two Youtube videos that lead to the site and got 2 conversions from that and one conversion from Facebook which lead to one of the blogs. The niche was related to music and the other celebrities. Scaled appropriately and fine tuned I will achieve my goal. As expected I probably won't see the results that I want to see until at least a week or two, so I'm not downing myself.
I've also discovered a niche selling a product that looks to have very little competition and the top competitors have less than attractive LP's. Thanks to my friend for the discovery, he passed it onto me because he had too much on his plate already. I used HTTrack to rip their website and all the paid content was downloaded with it. So the work that needs to be done with that project is simple as editing the files, throwing together a WP site and doing some
SEO. I could most certainly meet my daily goal just selling one of the products per day, which seems to be easy.

Some people would, others probably not.. But with my case he paid me a lot on different occasions. Free or cheap labor for experience that you will never gain normally is worth it if you can fit it into your schedule.
Also what I didn't mention is the possibilities of getting a % of what a website earns that you helped them put together. It takes a lot of trust with both parties either way.
So just throwing work at someone that just wants to learn will never work out. You have to show them how to
SEO, put together WP, show them plugins, show them how your tools work all the while incorporating it into what ever project you're doing.
