For those of you with a paypal account, how do you deal with privacy when you buy and sell with other people? Say you don't want everyone you do business with on the internet knowing your full name, how do you deal with that? Is there a way to be anonymous? Not talking about being shady, just having privacy.

Your only option is opening a business account (or upgrading your personal/premium account to a business account). If you're a sole proprietor then you can choose whatever name you want for your business and this is the name that will be displayed on receipts.

That and get yourself a PO Box for your address. Business Name plus PO Box equals no crazies coming to your house.
