I forgot to say... If you have a new site, don't expect to rank quickly for any hotel related terms, especially hotels in London, New York, Paris, Sydney... Or any big city.
It's a very competitive niche, if you're in it for the long haul it can be lucrative, but your content has to be very high quality and expect complaints from your big competitors (who have huge SEO teams) if you use any black hat SEO, expect to not profit anything within at least the next nine months.
Also.. never use hotelscombined.com, they are a total rip off, I started out using them and only after over a year did I discover how much I was being ripped off, go direct with the hotel company.
I don't know if you already have a successful travel site that you're adding the affiliate program to, but if you have not... my advice is make a site that is strictly AWESOME first, get over 100 uniques a day from Google for a couple of months, keep writing content, make a great, useful site THEN add the affiliate program.

They are all fairly reliable, but for hotels in London LateRooms.com might be your best bet, they pay on time and pay great.
Bear in mind that you will find yourself competing with TripAdvisor, LateRooms and most of these guys in the SERPS, and also me!
