I want to have an image only website made with wordpress with no adult or copyrighted content.

Would I be able to have google image and text ads on my website even though there is no content but only pictures?

Would this be against adsense guidelines? And if so, why?

I think you are not allowed to add any adult pictures stuff. Other than that you can go on with image hosting site. I am not sure about it.

I've already read that and a bunch more as well, but they all refer to "adult" content.

There would be no content, only images.

You should be fine mate as long as the pics are about drugs or adult material.

yes its perfectly allow till you don't use copyrighted images (you can skip this part ), watermarked images from other sites (Adsense will bann you for this), Adult pics.

What you mean you can't have watermarked images?

So adsense counts all watermarked images as copyright and would ban?
