You guys have all like 100+ blogs from what I've read

Now, I have the next situation:
I run my own webserver (LAMP) where I host multiple websites.
I have like 15 domains which I can use for blogging.
Currently I have 2 blogs (just started and relatively new to it.. so forgive me for making stupid comments) and on both blogs I have a stand-alone instance of WP. I copied the WP to both domain directories.
Is it possible to manage both blogs from 1 management panel??
And to expand from 1 management panel?
Ofcourse I would like to expand, what is the best way to do this?
I can go for :
sports.domain.com
health.domain.com
etc
etc
or should I only go for top level domains??
